16 Amazing, Healthy, 

& Delicious Low Carb Recipes  

My doctor has advised me that I need to watch my carbs and lower my cholesterol.   I’m borderline prediabetic, which makes me nervous, so I am taking my doctor’s advice seriously.


Luckily over the years, my taste buds have changed, so I do not mind eating healthier.  I just need to be more consistent.  


Over the past few months, I have made more of a conscious effort to make better eating choices.  I also eat between 8:30am-7pm. My dietitian has helped me evenly spread out my meals. I eat 3 meals and a snack.


I will usually enjoy more of my favorite foods and beverages on the weekends.  


At the time of this post, I have lost a total of seven pounds.  I am very happy with my progress. I don’t consider what I am doing a diet plan.  But, instead of a lifestyle choice.  


I have found some yummy recipes that have made it easier for me to make better food choices.  

I am excited to share them with you.  There are so many I decided to share my favorite breakfast, snacks, dinner and dessert recipes.



  • Rasberry Nut Muffins- Whip up a batch of these in advance and you have a yummy, quick and easy breakfast!  They are freezable, which makes it even better!

  • Carrot Banana Muffins-This is actually my favorite muffin! I love to munch on them right out of the oven!  You can have two for breakfast or eat just one if you want it to be a snack! These are also freezable!

  • Keto Frittata with Spinach-This is so easy to make! I made this on a Monday morning and cut it up into 4 servings and had it for breakfast that rest of the week.

  • Fried Eggs and Ham- You cannot go wrong with fried eggs and ham!  


To be honest, you could use these snack recipes for breakfast too

  • Paleo Almond Bars-I love these for a snack! This bar is high in protein, so it keeps you full longer! I love it because there is just a hint of sweetness that satisfies my sweet tooth.

  • Chewy Granola Bars-I found this yummy and kid-friendly recipe on The Paleo Mom website. My biggest tip for this recipe is to follow it exactly.  It took me a few tries to get this recipe right.  

  • Peanut Butter and Yogurt Smoothie-This smoothie is everything! I admit it may have a few more carbs than some of you may like.  But, to me, it is worth it! Now, I’m lactose intolerant, so I use coconut milk yogurt and almond milk. 


  • Keto Hamburger Patties with Creamy Tomato Sauce and Fried Cabbage- I never liked cabbage until now.  Who knew I would fall in love with fried cabbage!  The creamy tomato sauce makes the no bun hamburger incredible!  

  • Parmesan Crusted Salmon Bake with Asparagus-I am very basic when it comes to fixing fish, so this recipe was a nice change. I enjoyed this recipe, but I actually liked this recipe better with Tilapia.

  • Keto Lasagna-The sauce that you make for this lasagna makes it so good!  The homemade noodles are not bad, but you have to follow the directions or it comes out looking crazy!  My family actually loved this lasagna despite my horrible first attempt with the noodles.

  • Low Carb Cauliflower Pizza with Green Bell Peppers and Olives-My husband loves pizza, so I was shocked that he loved this pizza.  Depending on your oven, you might need to bake the cauliflower crust a little longer than what it says in the recipe.  My crust could have been a little crisper. Overall, this is the bomb! Eat it when it first comes out of the oven. The cauliflower crust tastes better hot.

  • Oven Baked Sausage with Veggies-I made this recipe with Sausage and meatless sausage.  My husband is a vegetarian, so I usually have to switch out the meat for him.  I actually liked it better with the meatless sausage. I thought it picked up more of the flavor from the veggies and spices.

  • Stuffed Chicken Breast with Zoodles and Tomato Sauce- First I will clarify, a zoodle is zucchini that looks like spaghetti noodles.  I do not make my own zoodles. I buy them fresh or frozen. I made this same meal for my husband but switched out the chicken with meatless meatballs.  I thaw them out just enough to stuff them. If you decide to use the meatless meatballs, I suggest letting them cook a little longer. They have a better flavor.
